POOR MAN'S CASSEROLE 
1 lb. ground beef
3 med. potatoes, sliced
1 med. onion, sliced
1 can garden peas OR 1 pt. frozen peas
1 can cream of chicken soup
1 carrot, sliced

Brown ground beef in skillet over medium heat. Pour off excess fat. Place a layer of ground beef, layer of potatoes, layer each of onion, carrot and peas in 2 1/2 quart casserole dish. Repeat layers until ingredients are used up. Pour can of chicken soup over top. Bake at 375 degrees in preheated oven for 1 1/2 hours.
