BEEF ROULADES IN SOUR CREAM | |
2 lb. beef round, 1/4" thick 1 lg. dill pickle 4 slices bacon 1 thinly sliced onion 2 tbsp. oil 1/2 c. sour cream Cut beef into 8 strips about 4" x 2 1/2". Slice pickle in eighths and bacon in half. On each strip of beef place cross wise a piece of pickle, slice of bacon and onion slice. Sprinkle with salt and pepper. Roll each one up and tie with string. Saute in oil in a skillet until brown. Add 1 cup water, cover and simmer about 45 minutes, or until tender. Make gravy, adding sour cream just before pouring over beef rolls and serving. |
