CARROT RINGS 
4 c. mashed cooked carrots
1/3 c. chopped onion
2/3 c. fine dry bread or cracker crumbs
4 eggs, lightly beaten
1 1/4 tsp. salt
1/2 tsp. black pepper

Mix carrots, onion, and crumbs in a large bowl. Add eggs, salt, and pepper and mix well. Turn into a well greased 5 cups ring mold and bake at 350 degrees for 30-35 minutes. Cool a few minutes, loosen edges carefully with a sharp knife and turn out onto plate. Fill center with hot buttered peas or other vegetables, if desired. Makes 6 servings.
