ZUCCHINI BROWNIES 
3/4 c. butter
1/2 c. sugar
1 tsp. vanilla
1 1/2 tsp. baking powder
2 c. zucchini, shredded (grated)
3/4 c. nuts, chopped
1/2 c. brown sugar
2 eggs
1 3/4 c. flour
4 or 5 tbsp. cocoa
1 c. coconut

Cream 3/4 cup butter, 1/2 cup brown sugar, 1/2 cup sugar, 2 eggs, 1 teaspoon vanilla. Add 1 3/4 cups flour, 1 1/2 teaspoon baking powder, 4 tablespoons cocoa, 2 cups zucchini, 1 cup coconut, and 3/4 cup nuts. Mix well and spread in a 13 x 9 x 2 inch pan or on a cookie sheet. Bake at 350 degrees for 40 minutes (for 13 x 9 x 2 inch pan) or bake at 350 degrees for 20 to 25 minutes (on a cookie sheet). Frost while hot with:

1 c. powdered sugar
2 1/2 tbsp. can milk
4 tbsp. cocoa
1 1/2 tbsp. soft butter
1 tsp. vanilla
1/2 tsp. cinnamon

Mixture will be thin. Mix and pour over cookies and spread. Cool and cut into bars.
