FOOLPROOF PEANUT BRITTLE 
1 c. sugar
1/2 c. water
1/4 c. light Karo syrup
1/2 tsp. butter
1 c. dry roasted peanuts
1/8 tsp. baking soda

Line electric fry pan with heavy duty aluminum foil.

Combine sugar, water, Karo syrup and butter in skillet. Set the temperature at 375 degrees. Cook, stirring often, until syrup is golden brown.

Stir in peanuts. Continue to stir until mixture is medium brown and the peanuts are coated. Add baking soda and stir vigorously. Mixture will foam slightly. Remove foil from skillet and allow to cool on a flat surface at least one hour. Peel foil carefully from candy and break into pieces. Makes one pound.
