10 - MINUTE PEANUT BRITTLE 
1 c. sugar
1/2 c. light syrup
1/8 tsp. salt
1 to 1 1/2 c. roasted salted peanuts or cereal
1 tbsp. butter
1 tsp. vanilla
1 tsp. baking soda

In 2 quart Corning Ware pan combine sugar, corn syrup, salt. Microwave on high for 5 minutes. Stir in peanuts or cereal. Microwave for 3 to 5 minutes, stirring after 2 minutes, until syrup and peanuts brown lightly. Stir in butter, vanilla, soda until butter melts and mixture is light and foamy. Spread on buttered cookie sheet 1/4 inch thick. Cook and break apart. Makes 1 pound.

Since microwave ovens vary in power, you may need to adjust your cooking time.
