MICROWAVE PEANUT BRITTLE 
1 c. sugar
1/2 c. white corn syrup
1 c. roasted salted peanuts
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda

Stir together in a 1 quart casserole dish the sugar and corn syrup. Micro on high for 4 minutes. Stir in peanuts. Micro on high for 3 to 5 minutes or until light brown. Add butter and vanilla; blend well. Micro high 1 to 2 minutes. Take out of micro and add 1 teaspoon baking soda until light and fluffy. Pour onto greased cookie sheet. Let cool 1 hour. Break into pieces.

Since microwave ovens vary in power, you may need to adjust your cooking time.
