MICROWAVE PEANUT BRITTLE 
1/2 c. white corn syrup
1 c. sugar
1 c. salted roasted peanuts
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda

In 1 1/2 quart microsafe dish stir together corn syrup and sugar. Microwave on high 4 minutes. Stir in peanuts. Microwave on high until light brown (3 to 5 minutes). Add butter and vanilla blending well. Microwave on high 1 or 2 minutes. Add soda, stir until light and frothy. Pour onto lightly buttered cookie sheet. Cool 1/2 hour break into pieces. Store in airtight container.

Since microwave ovens vary in power, you may need to adjust your cooking time.
