COWBOY SOUP 
2 tbsp. butter
1 med. onion
1 1/2 lb. hamburger
1 (28 oz.) stewed tomatoes or 1 (8 oz.) tomato sauce
2 cans beef consomme
2 cans water
4 carrots, sliced
4 celery stalks with tops
Parsley
1 tsp. thyme
Salt & pepper
1/2 c. barley or more or diced potatoes

Saute onion and butter. Add brown and drained hamburger, 1 (28 ounce) can stewed tomatoes or 1 (8 ounce) tomato sauce. Add 2 cans beef consomme with 2 cans water or 24 ounce beef broth. Add 4 carrots sliced, 4 stalks celery chopped with tops. Add 1 teaspoon thyme, parsley, salt and pepper, 1/2 cup barley or more or cubed potatoes. Simmer 45 minutes.
