SQUASH BREAD 
3 c. tender squash, cooked
2 eggs
1/2 c. milk
1/2 tsp. salt
6 oz. cottage cheese
1 (6-8 oz.) corn bread mix
1/2 stick butter, melt in loaf pan

Cook squash until tender. Mash. Put in mixing bowl. Add other ingredients except corn meal. Add that last. Pour in loaf pan. Bake 30 minutes at 375 degrees until done, last 5 minutes sprinkle Cheddar cheese or Parmesan cheese over top. Good to serve with fish or other vegetables.
