BARLEY BEAN SOUP 
1 c. Great Northern dried beans
2 qt. water
1/2 c. barley
1 onion, thinly sliced
2 carrots, scraped and sliced
2 stalks celery, sliced
2 cloves garlic, minced
Parsley
1 tsp. dried basil
1/2 tsp. pepper

Pick over beans and rinse and place in large pot with water to cover. Bring to a boil, then remove from heat and soak 1 hour. Pour off water and add 2 quarts fresh water. Cover and cook over low heat for 3 hours or until beans are tender and stir occasionally.
