QUICK SHRIMP AND CORN CHOWDER 
1 tbsp. butter
1 med. onion, diced (2/3 c.)
1 c. clam juice
1/4 tsp. dried thyme
1 (17 oz.) can cream corn
1 boiled potato, diced (1 c.)
1 c. raw shrimp
1 c. milk
Salt
Paprika
Parsley

Ligh tly brown onion in butter in heavy bottom pot, 2 quarts or larger. Add clam juice, thyme, corn, and diced cooked potato. Set on low heat. Simmer 5 minutes. Add shrimp until done. Add milk and heat again. Add salt, 1/4 teaspoon at a time, until desired taste. Decorate with paprika and parsley.
