STUFFING FOR WILD DUCK | |
2 lbs. hamburger 2 grated potatoes 4 stalks diced celery 1/2-1 grated onion 1 egg Salt and pepper to taste (needs a lot of salt) 1 tsp. poultry seasoning Mix together as for meatloaf. Stuff wild bird (mallard and wood ducks are best) and put remainder in bottom of roaster. Place bird on top. Cover and bake in slow oven until bird is done. Uncover and brown before taking out. Drain off grease. Excellent served with cranberries. Leftover hamburger mixture can be eaten like meatloaf. Makes great sandwiches. |
