CAROB OATMEAL SNACK CAKE 
3/4 c. whole wheat flour
3/4 c. unbleached flour

May use wheat free flour combinations such as oat and rye.

1/4 c. carob powder
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 c. boiling water
1 1/4 c. oats
1/2 - 3/4 c. honey
1/2 c. butter, oil or applesauce
2 eggs
1 tsp. vanilla

Pour 2 cups boiling water over oats. Let cool until only slightly warm. Mix all other ingredients. Add cooled oatmeal. Mix and pour into 9x13 greased pan. Bake at 350 degrees for 30-35 minutes.
