SWEET POTATO SOUFFLE 
2 c. mashed baked sweet potatoes
1 1/4 c. sugar
2 eggs
1/2 stick butter
1 c. milk
1/2 tsp. cinnamon

Mix together first 6 ingredients. Bake in casserole dish at 400 degrees for approximately 30 minutes or until firm.

TOPPING:

3/4 c. crushed corn flakes
1/2 c. chopped pecans
1/4 c. brown sugar
3/4 stick butter, melted

Mix all ingredients and spread over baked mixture. Bake an additional 3-4 minutes or until browned.
