VEGETABLE CASSEROLE 
2 (10 oz.) California blend frozen vegetables
1/2 lb. Velveeta cheese, cut into chunks
1 stick butter
1/2 pkg. Ritz crackers, crushed

Cook vegetables until tender, crisp. Drain and put in casserole dish. Salt and pepper to taste. Add half of butter cut into pieces. Add cheese, Melt other half butter and mix with crackers. Sprinkle on top and bake at 350 degrees for 30 minutes, uncovered.
