MIXED VEGETABLE CASSEROLE 
2 cans mixed Veg All (drained)
1 can sliced water chestnuts (cut up and drained)
1 1/2 c. Hellmann's mayonnaise
1 c. chopped onion
1 1/2 c. sharp cheese (shredded)
1/2 c. butter (melted)
1 stack Ritz crackers (crushed)

Mix first 5 ingredients, place in a 6 x 10 casserole, put crackers on top. Pour melted butter over crumbs.

Bake 45 minutes at 350 degrees.

Variation: Use one 16 ounce package frozen mixed vegetables, cooked until just tender (drained).
