MIXED VEGETABLE CASSEROLE 
1 bag mixed vegetables (broccoli, carrots, cauliflower)
1 c. grated Cheddar cheese
1 c. mayonnaise
1 c. finely chopped celery
1 med. onion, chopped
1 stick butter
1 tube Ritz crackers, crumbled

Cook vegetables until tender according to package directions. Put into casserole dish. Mix onion, celery, cheese and mayonnaise and spread over the vegetables. Melt butter, mix with cracker crumbs and spread on top. Bake about 30 minutes at 350 degrees.
