VEGGIE CASSEROLE 
2 cans mixed vegetables, drained
1 can sliced water chestnuts, drained
1 c. celery and onion, both chopped
1 c. cheddar cheese
2/3 c. mayonnaise
Salt and pepper to taste
25 Ritz crackers, crushed
3/4 stick butter, melted

Combine vegetables, cheese and mayonnaise. Season with salt and pepper. Spread in 9 x 13-inch baking dish. Bake 30 minutes at 350 degrees.

Mix crackers with butter. Sprinkle on top and bake another 15 minutes.
