EASY CHEESY POTATO CROCK-POT
SOUP
 
Enjoy a wonderful homemade soup!

1 onion, diced
a spoon or 2 of minced garlic
a little oil (to sauté onion and garlic)
1/2 lb. (8 slices) bacon
1/4 cup (1/2 stick) butter
flour (to thicken butter)
4 cups milk (or so)
6 large red skin potatoes, peeled and diced
fresh diced carrots
fresh peas and/or vegetables of choice
2 cups shredded cheddar cheese

Sauté diced onion. Add in garlic and sauté with onion. Put in Crock-Pot on LOW after caramelizing onion. Render down bacon slices and add to Crock-Pot.

In a separate pan melt butter. Add flour to thicken, making a roux. Once it is thickened and creamy add to Crock-Pot.

Add milk, diced potatoes, diced carrots, peas and/or vegetables of choice. Don't forget the cheddar cheese! Stir well. Put the lid on the Crock-Pot and cook on HIGH for about 3 hours or until potatoes and carrots are soft.
