APPLE CIDER SALAD 
2 env. unflavored gelatin
3 1/2 c. cider, divided
2 tbsp. sugar
Dash of salt
2 med. sized apples
1/2 c. chopped carrots
1/2 c. chopped celery

Combine gelatin with 1/2 cup cider, sugar and salt in saucepan; stir over low heat until gelatin is dissolved. Add remaining cider and chill in refrigerator until partially set, but not firm. Pour about 1 cup gelatin mixture into 6 cup mold.

Arrange slices of 1 apple on top and cover with half remaining gelatin mixture. Chop second apple and combine with carrots and celery; add to remaining gelatin mixture and pour into mold. Chill until set. Unmold and serve with lettuce and dressing as desired. Makes 8 servings.
