APPLE AND CHICKEN SALAD 
2 c. cooked cubed chicken
2 c. diced celery
2 c. diced carrots
1 c. apple, diced
1/2 c. sliced almonds
1/2 c. mayonnaise
2 tsp. lemon juice

Combine all ingredients and chill several hours. Serve in lettuce cups or stuff tomatoes or green pepper cup. Garnish with sliced almonds or toasted coconut.
