BREAD POTATO FILLING 
1 onion, cut fine
3 stalks celery, cut up fine
6 med. potatoes, mashed
1 loaf stale bread
3 eggs
1/4 c. parsley, chopped
Salt & pepper to taste
1 c. chicken stock
1 tbsp. poultry seasoning

Cook potatoes, mash and set aside. Slowly fry onion and celery. Cut up bread into small pieces. Add to bread, eggs, onions, celery, parsley, salt and pepper, chicken stock, potatoes and seasoning. Put in a greased casserole, cover and bake 1 hour at 375 degrees. Uncover last 15 minutes to brown top. If you stuff a fowl with this filling do not pack too tightly or filling will be heavy.
