OPEN FACE CRAB MEAT AND CHEESE
SANDWICH
 
10 slices toast, crusts on
5 tbsp. tartar sauce
paprika
10 slices American cheese
1 lb. backfin crab meat
Tabasco
Worcestershire sauce
1 tsp. lemon juice
1/4 c. mayonnaise

Pick over crab meat for shells. Then combine with mayonnaise, lemon juice, Worcestershire sauce and a dash of Tabasco.

Now cut five of the toast slices into two triangles each. Spread all toast with tartar sauce. Arrange each serving with one whole slice of toast flanked by two triangles. Then spread the crab meat mixture so it covers the toast, the top with cheese slices, covering crab. Dash top with paprika. Broil until bubbling.
