PORK - PINEAPPLE HAWAIIAN | |
1 1/2 lean pork tenderloin, cut in cubes 1 tbsp. shortening 1 tsp. salt 1/3 c. water 1/2 c. brown sugar 3 tbsp. cornstarch 1/3 c. vinegar 1 lb. can pineapple chunks, drained (reserve 1/2 c. liquid) 1/4 c. soy sauce 1 green pepper, diced 1 green onion, sliced 1 (8 oz.) can water chestnuts, drained & sliced 2 tomatoes, cut up Rice or Chinese noodles Brown meat in shortening. Season with salt. Add water. Cover, simmer 40 minutes. Drain off fat, check while simmering. Combine sugar and cornstarch. Add vinegar and pineapple liquid, soy sauce and blend well. Add to meat, reduce heat and simmer about 5 minutes. Add green pepper, onion, pineapple, chestnuts and tomatoes. Cook 3 minutes. Serve with rice or noodles. Serves 6. |
