HAWAIIAN PORK CHOPS
1/2 cup chopped onion
1/2 cup chopped green pepper
4 to 6 loin pork chops, trimmed (each about 4 oz. w/bone - thick ones work best)
2 tbsp all-purpose flour
1 tsp. salt
1/4 tsp. black pepper
4 to 6 pineapple rings, sweetened (drain juice and reserve)

SAUCE:

1 tbsp. vinegar
1/4 cup ketchup (Hunts)
1/2 cup reserved pineapple juice

In a large skillet sprayed with non-stick cooking spray (Pam), cook onion, green pepper until onion is clear. Remove from skillet.

Mix flour, salt and pepper in plastic bag. Add chops, 1 at a time, shake to coat meat. Brown chops in skillet. Place pineapple ring on top of each chop. Sprinkle with onion and green pepper.

Combine vinegar, ketchup, reserved pineapple juice to make sauce. Pour over chops. Simmer 45 minutes or until chops are done.

Serves 4 to 6.
