BISTRO CASSOULET 
2 med. carrots, sliced thin
1 med. onion, chopped
1/2 c. water
1 jalapeno pepper, seeded & chopped
3/4 lb. extra lean ham, cut into 1/2" pieces
1 (15 oz.) can white beans
1 (15 oz.) can black beans
1/4 c. dry white wine
3/4 tsp. dried thyme
1/2 tsp. dried oregano
1 bay leaf
1 c. bread crumbs
2 tbsp. chopped parsley

Combine carrots and onion in water; cook until tender. Stir in next 7 ingredients and remaining water, cook about 5 minutes. Remove bay leaf. Sprinkle with crumbs and parsley. Makes 4-6 servings. Good for heart patients. 294 calories. 3 g fat. 35 mg cholesterol. 24 g protein.
