CHINESE PEPPER STEAK 
1 lb. beef, chuck (cut in thin strips)
1/4 c. cooking oil
1 clove garlic, minced
1 tbsp. soy sauce
1 tsp. salt
1/4 c. water
1 c. green pepper, cut in 1/2 inch pieces
1 c. chopped onion
1/2 c. chopped celery
1 sm. can mushrooms (optional)
2 tomatoes, cut in eighths
1 tsp. cornstarch
1 c. water

Brown beef in hot oil; add garlic and cook until yellow. Add soy sauce, salt and 1/4 cup water, cook 45 minutes. Add vegetables. Cook 10 minutes. Stir in cornstarch blended with 1 cup water. Add tomatoes and mushrooms. Cook 5 minutes. Serve with hot, fluffy rice and Chinese noodles. Add more soy sauce to taste, if desired.
