PEPPERONI SOUP 
4 tbsp. tomato paste
1 tbsp. oil
2 cloves garlic

Brown all the above ingredients in large pot. The add: 1 c. carrots (chopped) 1 (16 oz.) can cannanelli beans 1 (16 oz.) can chick peas 1 (16 oz.) can kidney beans 1 c. celery (chopped) 2 c. pepperoni

Allow this to simmer until vegetables become tender then add a good amount of escarole and simmer 5 minutes. Depending on the consistency of the soup you may want to add more water. Salt and pepper to taste.
