STUFFED STEAK 
2 c. Stove Top flexible serving stuffing mix
1 c. boiling water
2 tbsp. butter
1 1/2 lbs. flank steak, or cube steak (pounded for rolling)
2 scallions, trimmed (or onions)
1 red pepper, seeded & cut into strips
1 (12 oz.) jar mushroom gravy
1/4 c. Burgundy wine or apple juice
2 tbsp. grated Parmesan cheese
1 garlic clove, minced

Combine stuffing mix, water and butter. Let stand 5 minutes. Spoon stuffing on steak, leaving 1 inch border. Add scallions and pepper; then roll from long edge. Secure with wooden picks. Place seam side down in baking pan or microwave-safe dish. Mix remaining ingredients and pour over steak. Oven bake 1 hour at 350 degrees. Microwave: cover and cook at medium (50%) for 30 minutes, rotating dish half way through cooking. Let stand 5 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
