MICROWAVE STUFFED FLANK STEAK 
1 1/2 to 2 lbs. beef flank steak
Salt & pepper
2 tbsp. butter
2 tbsp. finely chopped onion
1/4 c. finely chopped celery
2 c. soft bread crumbs (I use a good 1/2 pkg. Pepperidge Farm seasoned stuffing)
Water if necessary
1/4 tsp. ground sage
1 can (10 3/4 oz.) condensed tomato soup
Parsley

1. Pound flank steak well, season with salt and pepper and set aside.

2. Combine butter, onion and celery in medium glass dish. Microwave on roast 3 minutes or until vegetables are partly cooked. Stir in bread crumbs and sage. Moisten with water if necessary. Spread stuffing lengthwise on steak and roll up, tie with strings in 3 to 4 places (I use large toothpicks). Place in 1 1/2 quart (10 x 6 inch) glass baking dish. Cover with plastic wrap.

3. Microwave on simmer 20 minutes. Pour soup over meat and sprinkle with parsley, recover and continue on simmer for 4 to 5 minutes or until fork tender. Let stand covered for 5 minutes before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.

Because it works. I used this recipe which came in a cookbook in the late 1970's. Women of the time were joining the workforce in droves and were having a difficult time. Fast food was not yet prominent nor a acceptable way to feed your family. They had to adapt the recipes their stay at home 1950 era Mothers taught them to new hectic lifestyles. Enter the microwave! It was a Godsend with an accompanying cookbook that covered a full spectrum of menus that be made in what seemed like a heartbeat and most tasted great! I no longer have that book but today specifically sought out the microwave Flank steak recipe using the miracle of something called the internet, lol! I was looking to find the way I cooked the dish which was delicious and I had a true hankering! I could not believe I stumbled upon it but here it is. I am not surprised by your response given the attention paid to cooking today. However, it has only been relatively recently that food prep has gotten that respect. It was not always that way and it is about time. But don't knock it till you try it. You might be shocked and find that you like it and be out of the kitchen in a flash. The microwave really can do more than reheat and make popcorn.
