BROCCOLI CASSEROLE 
4 c. chopped broccoli
1/3 c. finely chopped onion
1/4 c. butter
3 tbsp. flour
3 eggs, well beaten
1/2 c. vegetable cooking water or broth
3/4 c. grated cheddar cheese
1/2 c. bread crumbs
1 tbsp. butter

Preheat oven to 325 degrees. Melt 4 tablespoons (1/4 cup) butter in a large skillet. Stir in onion and broccoli; saute covered until broccoli is barely tender. (If using frozen broccoli, drop about 20 oz. into a small amount of boiling water, cover and cook quickly. Add to skillet and use the cooking water later in the recipe). Stir flour into the onion broccoli mixture and let cook a minute or so. Add cooking water or broth; stir in cheese until blended. Remove from heat and gradually stir in eggs. Pour into a well greased 1 1/2 to 2 quart casserole. Pour crumbs over and dot with butter. Bake 30 minutes or until done. 8 servings.
