OATMEAL MUFFINS 
2 c. oats
2 c. sour cream
2/3 c. melted butter
4 eggs
2 c. light brown sugar, packed
2 tsp. baking powder
2 c. flour
1 tsp. baking soda
1/2 tsp. salt

Combine oats and sour cream, stir in melted butter, eggs and brown sugar until well mixed. Stir in rest of ingredients just until blended. Divide into 2 (12 cup) greased muffin pans. Sprinkle lightly with more oats. Bake at 375 degrees for 20 to 25 minutes. Turn out onto wire rack. Makes 2 dozen.
