FANCY EGG SCRAMBLE 
1 c. (4 oz.) diced Canadian bacon
1/4 c. chopped green onion
3 tbsp. butter
12 beaten eggs
1 (3 oz.) can mushroom stems, drained
1 recipe cheese sauce
4 tsp. butter, melted
2 1/4 c. soft bread crumbs (3 slices)
1/8 tsp. paprika

In large skillet cook Canadian bacon, add onion and the 3 tablespoons butter - until onion is tender but not brown. Add eggs and scramble just until set. Fold mushrooms and cooked eggs into cheese sauce. Turn into a 12 x 2 inch baking dish.

Combine remaining melted butter, bread crumbs and paprika. Sprinkle atop eggs - cover - chill 30 minutes before baking. Bake uncovered at 350 degrees for 30 minutes. Serves: 10.

CHEESE SAUCE:

Melt 2 tablespoons butter, blend in 2 tablespoons all-purpose flour, 1/2 teaspoon salt and 1/8 teaspoon pepper. Add 2 cups milk - cook and stir until bubbly. Stir in 1 cup (4 ounces) shredded American cheese, until melted.
