FANCY EGG SCRAMBLE 
1 c. diced ham or Canadian bacon
1/4 c. green onion, chopped
3 tbsp.. butter
12 eggs
1 (4 oz.) can mushrooms, drained

1 RECIPE CHEESE SAUCE
2 tbsp. butter
2 tbsp. flour
1/2 tsp. salt
1/8 tsp. pepper
2 c. milk
1 c. shredded Cheddar cheese

Melt butter, blend in flour, salt and pepper. Add 2 cups milk. Cook and stir until bubbly. Stir in shredded Cheddar cheese. 2 1/2 c. soft bread crumbs, (3 slices) 1/2 tsp. paprika

In large skillet, cook ham and onion in butter until onion is tender, not brown. Add eggs and scramble until just set. Fold mushrooms and eggs into cheese sauce. Turn into 12 x 17 inch baking dish.

Combine the 4 teaspoons melted butter, bread crumbs and paprika, sprinkle on eggs. Cover, chill until 30 minutes before serving. Bake at 350 degrees for 30 minutes. (Terrific to make the night before.)
