FANCY EGG SCRAMBLE 
1 c. diced ham
1/4 c. chopped onion
3 tbsp. butter
12 beaten eggs
3 tbsp. chopped chives
1 (3 oz.) can mushroom pieces, drained
1 recipe cheese sauce
4 tbsp. butter
2 1/4 c. soft bread crumbs
1/8 tsp. paprika

Cook ham and onion in 3 tablespoons butter until onion is tender. Add eggs and chives, scramble until set. Fold mushrooms and cooked eggs into cheese sauce.

Turn into 9 x 13 inch dish. Combine remaining melted butter, crumbs and paprika; sprinkle on top of eggs. Cover. Chill until 30 minutes before serving. Bake uncovered for 30 minutes in 350 degree oven.

CHEESE SAUCE:

2 tbsp. butter
2 tbsp. flour
Salt
1/8 tsp. pepper
2 c. milk
1 c. shredded cheese

Melt butter, blend in flour, salt and pepper. Add milk and cook until bubbly. Add cheese.
