FANCY EGG SCRAMBLE 
1 (4 oz.) pkg. Canadian bacon
3 tbsp. butter
1/4 c. onion, chopped
12 eggs, beaten
1 (3 oz.) can mushroom stems and pieces, drained
4 tsp. butter
2 1/4 c. soft bread crumbs
1/8 tsp. paprika
1 recipe cheese sauce

In large skillet cook Canadian bacon and onion in 3 tablespoons butter until onion is tender but not brown. Add eggs and scramble just until set. Fold mushrooms, 1 1/8 cups bread crumbs, and cooked eggs into cheese sauce. Turn into a 9x12-inch baking dish.

Combine remaining crumbs, butter, and paprika. Sprinkle on top of egg mixture. Cover. Chill until 30 minutes before baking. Bake uncovered in 350 degree oven for 30 minutes. Serves 8-10.

CHEESE SAUCE:

Melt 2 tablespoons butter. Blend in 2 tablespoons flour, 1/2 teaspoon salt and 1/2 teaspoon pepper. Add 2 cups milk. Cook and stir until bubbly. Stir in 1 cup (4 ounces) shredded processed American cheese until melted.
