MEAT AND POTATO QUICHE 
3 tbsp. vegetable oil
3 c. coarsely shredded raw potato

Stir together in 9 inch pie pan as a crust. Bake at 425 degrees for 15 minutes or until just brown. Layer on:

1 c. grated Swiss or cheddar cheese
3/4 c. cooked diced chicken, ham or browned sausage
1/4 c. chopped onion

In a bowl, beat together:

1 c. evaporated milk
2 eggs
1/2 tsp. salt
1/8 tsp. pepper

Pour over other ingredients. Sprinkle with 1 tablespoon parsley flakes. Return to oven and bake at 425 degrees about 30 minutes or until lightly browned. Allow to cool 5 minutes before cutting into wedges. Serves 4 to 5.
