TUNA POTATO QUICHE | |
1 ready made 9 inch deep dish pie shell 2 med. potatoes, peeled and quartered 1 (7 oz.) can tuna, drained 2 eggs, beaten 1/2 c. mayonnaise 1/2 c. chopped onion 1 (4 oz.) can mushroom pieces, drained 1/2 c. sliced scallions 2 tbsp. flour 1 (8 oz.) pkg. Swiss cheese (muenster may be substituted) Salt and pepper to taste Prepare pie shell as directed. Cook potatoes in salted water until tender, mash and combine with next seven ingredients. Add 3 slices of cheese, shredded. Pour into pie shell. Top with remaining cheese. Bake at 350 degrees for 40-45 minutes. |
