BREADED PORK CHOPS 
1 egg
1/4 c. milk
1 c. fine dry bread crumbs
1 tsp. salt
1/8 tsp. pepper
4 loin or rib chops, 3/4 inch thick
4 tbsp. bacon drippings

Beat egg and milk together until thoroughly mixed. Mix bread crumbs, salt, and pepper. Spread on waxed paper. Dip chops into egg mixture; drain, then coat with crumbs. Heat fat in a heavy skillet. Brown chops until golden in gently sizzling fat, 3 to 5 minutes to the side. After chops are browned, cover tightly and cook over very low heat for 45 minutes to an hour or oven bake at 300 degrees for 45 minutes. Remove cover and cook for 10 minutes more to crisp surfaces. Makes 4 servings.
