POTATO AND ONION PANCAKES | |
1 1/2 lbs. potatoes (about 4 c.), peeled & shredded 3 tbsp. all-purpose flour 1/4 c. butter 1 lg. egg 1 env. onion soup mix (not instant) Mix all ingredients except butter in large bowl. In a heavy 10" skillet, melt butter over medium heat. When hot enough, drop 1/4 cupfuls potato mix several inches apart into butter. Cook 3 minutes on each side until brown. Drain on paper towel. Makes about 12 pancakes. |
