POTATO PANCAKES 
2 eggs, beaten
1/3 c. all-purpose flour
1 tsp. salt
1/8 tsp. pepper
1 1/2 lb. potatoes, shredded
1 onion, chopped fine
1/2 c. vegetable oil

In large bowl, mix eggs, flour, salt and pepper until blended well. Stir in potatoes and onions and mix well. Heat oil in frying pan over medium heat. Drop potato mixture by tablespoonful into hot oil and flatten slightly with back of spoon. Cook until golden brown, turning once, about 5 minutes. Drain on paper towels. Makes 10 to 12 pancakes.
