POTATO PANCAKES | |
4 med. white potatoes, peeled & coarsely shredded 1 sm. onion 1 egg 1/3 c. flour 1 1/2 tsp. salt 1/8 tsp. pepper 2 tbsp. oil Combine potatoes, onion, egg, flour, salt and pepper in medium mixing bowl. Mix well. Heat oil in large skillet. Spoon 1/4 cup potato mixture into skillet for each of 4 pancakes. Flatten with spatula. Cook over moderate heat, 10 to 15 minutes or golden brown, turning over once. Drain on paper towels. Repeat with remaining mixture. Serves 6 to 8. |
