APRICOT ORANGE CHICKEN BROIL 
1 pkg. boneless chicken breasts
Salt and pepper
1/3 c. apricot preserves
1 tbsp. orange juice
1 tbsp. Dijon mustard

Sprinkle chicken with salt and pepper. Place on broiler pan. Broil 3 minutes on each side.

Meanwhile, mix preserves, orange juice, and mustard. Turn chicken and brush generously with half of apricot mixture. Broil 4 minutes; turn and brush with sauce. Broil 4-6 minutes longer.

Place on platter and spoon pan drippings over. Serve with rice. Serves 4.
