CURRIED MEAT LOAF (Microwave) 
1 1/2 lbs. ground beef
3/4 c. rolled oats
1/2 c. plain yogurt
1 med. onion, chopped (about 1/2 c.)
1 egg
2 tsp. curry powder
1 tsp. salt
1 tsp. dry mustard
1/4 tsp. red pepper sauce
Vegetable Sauce (below)

Mix all ingredients except Vegetable Sauce. Spread beef mixture evenly in loaf dish, 9x5x3 inches. Cover with waxed paper and microwave on medium-high (70%) 25 to 28 minutes, rotating dish 1/2 turn after 12 minutes, until center is no longer pink. Let stand covered 5 minutes. Prepare Vegetable Sauce; serve with meat loaf. 6 servings.

VEGETABLE SAUCE:

1 med. tomato, chopped (about 3/4 c.)
1 sm. cucumber, seeded and chopped (about 1 c.)
1/4 c. sliced green onions (with tops)
1 clove garlic, finely chopped
1/4 c. plain yogurt
1/2 tsp. curry powder

Mix all ingredients.

Since microwave ovens vary in power, you may need to adjust your cooking time.
