FAVORITE MEATLOAF (MICROWAVE) 
1 (8 oz.) can tomato sauce, divided
1/4 c. brown sugar
1 tsp. mustard
2 eggs, slightly beaten
1 med. onion, minced
1/4 c. cracker crumbs
2 lb. lean ground beef
1 1/2 tsp. salt
1/4 tsp. pepper

In small bowl mix tomato sauce, brown sugar and mustard; set aside. In large bowl combine eggs, onion, crackers, ground beef, salt and pepper. Add 1/2 cup of tomato sauce mixture and stir thoroughly. Place meat mixture in glass ring mold or 2 quart micro-proof round casserole. Pour remaining tomato sauce over top of meat. Cook, uncovered, on high (maximum power) for 12 to 14 minutes; let stand, covered, 5 to 10 minutes before serving.

Temperature probe may be used. Insert in center of meat loaf. Set at 160 degrees. Makes 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.

I was thrilled when I saw I was not the only one who made this Meat Loaf. It has been around a long time now. But I notice the 1/4 cup of vinegar was missing. You add the vinegar with the tomato sauce, brown sugar,and mustard. That combination is what makes this recipe so good. When I make stuffed green peppers, I make this recipe with rice in place of the cracker crumbs, then stuff my peppers and Microwave them, like I do with the meat loaf. Whether I am making meat loaf or stuffed green peppers, there is never any left overs.
