FAVORITE MICROWAVE MEATLOAF | |
1 (8 oz.) can tomato sauce 1/4 c. packed brown sugar 1 tsp. prepared mustard 2 eggs, lightly beaten 1 med. onion, minced 1/4 c. cracker crumbs 2 lbs. lean ground beef 1 1/2 tsp. salt 1/4 tsp. pepper 1 (8 oz.) can mushroom pieces (reserve some for garnish) In small bowl, combine tomato sauce, brown sugar and mustard; set aside. In large mixing bowl, combine eggs, onion, cracker crumbs, mushrooms, ground beef, salt and pepper. Add 1/2 cup of tomato sauce mixture and stir thoroughly. Place meat mixture in glass ring or 2 quart microproof round casserole. Pour remaining tomato sauce mixture over top of meat. Garnish with mushrooms. Cook, uncovered, on High power 12 to 14 minutes. Let stand covered 5 to 10 minutes before serving. A temperature probe may be used. Set at 160 degrees and insert probe in center portion of meatloaf. Really good stuff and fast! |
