FAVORITE MICROWAVE MEATLOAF 
1 (8 oz.) can tomato sauce
1/4 c. packed brown sugar
1 tsp. prepared mustard
2 eggs, lightly beaten
1 med. onion, minced
1/4 c. cracker crumbs
2 lbs. lean ground beef
1 1/2 tsp. salt
1/4 tsp. pepper
1 (8 oz.) can mushroom pieces (reserve some for garnish)

In small bowl, combine tomato sauce, brown sugar and mustard; set aside.

In large mixing bowl, combine eggs, onion, cracker crumbs, mushrooms, ground beef, salt and pepper. Add 1/2 cup of tomato sauce mixture and stir thoroughly. Place meat mixture in glass ring or 2 quart microproof round casserole. Pour remaining tomato sauce mixture over top of meat. Garnish with mushrooms. Cook, uncovered, on High power 12 to 14 minutes. Let stand covered 5 to 10 minutes before serving.

A temperature probe may be used. Set at 160 degrees and insert probe in center portion of meatloaf. Really good stuff and fast!

Since microwave ovens vary in power, you may need to adjust your cooking time.
