ZUCCHINI PIE 
7-8 c. peeled and sliced thin zucchini, slices cut in sm. pieces
1 c. sugar
1/2 tsp. salt
1 1/2 tsp. apple pie spice
1/4 c. lemon juice
1/4 c. cornstarch
1/2 c. water

Combine zucchini, sugar, salt, pie spice, and lemon juice. Cook until tender about 30 minutes. Mix cornstarch and water. Add to the above and cook until thick. Pour in unbaked pie crust, dot with butter.

Add top crust. Bake at 400 degrees for 30 minutes.
