ZUCCHINI PIE 
8 c. sliced zucchini
1 1/2 tsp. cinnamon
1 1/2 tsp. cream of tartar
2 tbsp. flour
1 1/4 c. sugar
Dash salt
Dash nutmeg
2 tbsp. lemon juice
Double pie crust

Peel and quarter zucchini. Remove seeds. Slice and simmer until translucent. Cool. Add above ingredients. Put into pie crust. Put on top crust. Bake at 400 degrees for 45 minutes. Tastes like apple pie.
