NEBRASKA ZUCCHINI PIE 
3 c. diced or sliced zucchini
3 tbsp. lemon juice
1 1/2 c. sugar
3/4 c. cinnamon
1/4 tsp. salt
4 tbsp. flour
1 tsp. vanilla
2 pie crusts

Combine sugar, cinnamon, salt, flour, and mix with zucchini and lemon juice. Place mixture in crust lined pie pan and sprinkle with vanilla. Add top crust and bake at 350 degrees for 35-45 minutes.

This is a wonderful way to use your zucchini and everybody loves it.
